Gin was commonly used for cocktails during the Prohibition because it could be easily made at home (often in bathtubs in large batches, hence the phrase “bathtub gin” referring to gin that’s not necessarily great). He apparently discovered that adding the honey to gin and lemon disguised the taste of any subpar gin.
It’s credited to a bartender at the Hotel Ritz Paris in the 1920’s.
